Ingredienten: 860 a 1000 g osso bucco
2 uien in blokjes
1 grote wortel in blokjes
4 tenen knoflook
3 sprietjes tijm
3 sprietjes salie
4 stukjes sinaasappelschil
1/2 kaneelstokje
3 a 4 lepels olijfolie
4 ansjovisfilets
1,5 kopjes gezeefde tomaten
2 glaasjes witte wijn
gehakte peterselie
1 handvol meel met zout en peper

Voorbereiding:
Bereidingswijze: Dust the osso bucco in the seasoned flour.
Heat a thick bottomed casserole pan, add the oil and brown the meat well on both sides.
Remove the meat and add the carrots, onion and garlic, soften for 4-5 minutes, add the white wine and reduce for 2 minutes until almost dry.
Add the tomatoes, anchovies, thyme, cinnamon, sage and orange peel and bring to a simmer.
Return the meat to the casserole, put on the lid and cook in the oven at 180 ?C/350 ?F gas mark 5 for 2 hours until deliciously tender and rich.
Sprinkle with parsley, taste for seasoning and tuck in!
